Bousti is a very special delicacy on Kasos although it is not for the faint-hearted. In concept it is similar to a Scottish haggis and the frugal peasant impulse that inspires it - the desire to waste nothing - is the same in both places. It is made from either a goat's or a sheep's stomach lining or intestine which is stuffed with the animal's own offal. Spleen, heart, lungs and liver (and goodness knows what else) are washed and finely chopped. This exotic mix is combined with tomatoes, onion and rice and the intestine is then tied off and ready to cook. Although usually boiled, some enjoy it grilled. Bousti is a dish in its own right and needs no accompaniment, except perhaps some Dutch courage! Enjoy it all year round.
